These basic oatmeal cookies are naturally sweetened by applesauce and unlike most “regular” cookies, they don’t call for any sugar at all. The basic recipe makes a delicious cookie, but the real fun is in the add-ins! Try the suggestions listed below but don’t stop there – experiment with your personal favorites.
Sugar Free Spicy Oatmeal Cookies
1 cup flour
1 cup oatmeal
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/2 teaspoon ground cloves
1 cup unsweetened applesauce
1/4 cup water
1/3 cup vegetable oil
2 eggs
1 teaspoon vanilla extract
Add-ins: this basic cookie takes on a whole new flavor and personality, depending on what you decide to add! Try some of the following, alone or in combination, or come up with your own add-ins! A word of warning, though – most chips and dried fruits are high in sugar, so even though the finished product will still be lower in sugar than most cookies, it will be higher in sugar than the basic recipe.
1/2 – 3/4 cup chopped nuts
1/2 – 3/4 cup raisins
1/2 – 3/4 cup chopped dates
1/2 – 3/4 cup dried cranberries
1/2 to 1 cup chocolate, cinnamon, or butterscotch chips
Preheat oven to 375 degrees. Combine all ingredients and beat well. Drop by spoonfuls onto a baking sheet that’s either lightly greased or sprayed with non-stick spray, or use a silicon “cookie mat”. Bake for 10-15 minutes or until browned. Makes about four to five dozen cookies, depending on what you add to the basic recipe.
