These succulent squares are fruit-studded brownie-like confections that are part cake, part cookie, and entirely delicious! They’re moist and tender, and since they draw a lot of their sweetness from fruit, they satisfy your cravings without being overly sweet.
Sugar Free Raisin Date Squares
1-1/4 cups water
1 cup chopped dates
3/4 cup golden raisins
1/2 cup dark raisins
8 tablespoons margarine, cut into pieces
2 eggs
1 teaspoon vanilla
1 cup flour
18 packets sweetener
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1/4 cup chopped walnuts or almonds
In medium pan, combine water, dates, prunes, and raisins and heat to boiling. Reduce heat and smiller uncovered for about 10 minutes or until fruit is tender and water is absorbed. Remove from heat and add margarine, stirring until all the margarine is melted. Cool to room temperature, then mix in eggs and vanilla.
In separate bowl, combine flour, sweetener, baking soda, cinnamon, nutmeg, and salt. Mix combined ingredients into fruit mixture to form batter. Spread evenly in greased 11×7 baking dish and sprinkle top with nuts.
Bake in preheated 350 degree oven for 30 – 35 minutes, or until cake springs back to the touch. Cool on rack, then cut into squares to serve.
