Sugar Free Peanut Butter Cookies
2 cups creamy peanut butter
2 cups sucralose (Splenda or store-brand equivalent)
2 eggs
2 teaspoons vanilla extract
Preheat the oven to 350 degrees. Combine all ingredients in a large mixing bowl and beat until well blended. Drop the batter by rounded tablespoons onto a greased cookie sheet, and bake for 8-10 minutes, or until the edges begin to brown. To increase browning, lightly coat the cookies with cooking spray before placing them in the oven.
