These delicious, easy-to-make cookies get their sweetness from fruit. Because there’s no sugar in the recipe, they don’t get too brown – but that’s fine, because it lets all the delectable fruit morsels show!
Sugar Free Fruit & Nut Cookies
1 apple, peeled and chopped
3/4 cup chopped dates
1/2 cup raisins
1/2 cup water
1/2 cup dried cranberries
1/2 cup chopped walnuts
1 cup plus 1 tablespoon all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
2 eggs
1 teaspoon liquid artificial sweetener
Combine dates, apples, raisins and water in a large pan and bring to a boil, then reduce heat. Let mixture simmer for about five minutes, then remove from heat.
Put flour, cinnamon, baking soda, and salt into a bowl and whisk to combine, then stir dry ingredients into cooled apple/raisin/date syrup. Add eggs and sweetener to batter and mix well.
Drop by tablespoonfuls onto a nonstick baking sheet. Bake at 350 degrees for 10-12 minutes.
