Sugar Free Devil’s Food Cake With Vanilla Cream Cheese Frosting

For this recipe you’ll need a 9″ x 11″ baking pan, an electric mixer, and a food processor or blender.

Sugar Free Devil’s Food Cake

2/3 cup margarine, softened (not reduced calorie)
2 1/4 cups flour
2 cups sucralose
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
9 tablespoons baking cocoa
1 1/4 cups milk or soymilk
3 eggs
1/3 cup unsweetened applesauce
3 tablespoons oil
2 teaspoons red food coloring (optional)

Preheat the oven to 350 degrees. Grease and flour a 9″ x 11″ baking pan and set aside. In a medium bowl, combine all the dry ingredients with a whisk. In a large bowl, combine the margarine, 1/2 cup of the milk, and the dry ingredients, and stir with the electric mixer until all the flour is dampened. Add the remaining ingredients and beat on medium-high speed for two minutes. Pour the batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let the cake cool thoroughly before frosting.

Sugar Free Vanilla Cream Cheese Frosting

2 8 oz. packages cream cheese, softened
1/2 cup butter or margarine (not reduced calorie), softened
2 cups sucralose, pulsed into powder in the food processor or blender
3 teaspoons vanilla extract

In a medium bowl, use the mixer to cream together the cream cheese and butter or margarine. Mix in the vanilla, then gradually stir in the powdered sucralose. Store in the refrigerator until ready to use.
