Crisp, zesty, and packed with sparkling citrus flavor, these sugar free cookies look as great as they taste. You can play up their pretty color by adding a few drops of either yellow or orange food color to your batter. Their light, refreshing taste makes them a perfect accompaniment to coffee, tea, or a tall glass of sugar free lemonade. This recipe makes about two dozen cookies, but can easily be doubled if you’re serving a crowd.
Sugar Free Citrus Rounds
1/2 cup butter
1/2 cup artificial sweetener
1/3 cup hot water
1/2 teaspoon orange extract
1/2 teaspoon lemon extract
1 teaspoon vanilla extract
2 cups flour
1 teaspoon baking powder
1/2 teaspoon salt
3/4 cup pecans, chopped fine
1 tablespoon orange peel, finely grated
1 tablespoon lemon peel, finely grated
In a large mixing bowl, cream together the butter, sweetener, hot water, and extracts; set aside. In a medium mixing bowl, sift together the flour, baking powder, and salt. Slowly stir the flour mixture into the creamed mixture until all is well combined. Blend in the pecans, grated peel, and optional food coloring. On a floured surface, shape the dough into a roll about 6 inches long. (Make two rolls if you’re doubling the recipe.) Wrap the roll in waxed paper and refrigerate for several hours.
Preheat the oven to 400 degrees. After the dough is very well chilled, remove it from the refrigerator and cut it into about 24 cookies. Place the cookies on a cookie sheet covered with aluminum foil and lightly greased. Bake the cookies for 12-15 minutes, or until lightly browned around the edges.
