Save The Day With Fresh Veggie Heroes

Do you love big, overstuffed submarine sandwiches, but hesitate to serve them because they're usually loaded with unhealthy ingredients? Give these Fresh Veggie Heroes a try – they're full of bold, bright flavors, and feature a medley of vegetables which give them all the crispy, crunchy, full-bodied texture you could want. Without high-fat deli meats, these heroes stay low in calories, but lose nothing in taste. Look for big loaves of thick, crusty French or sourdough bread to serve them on – they make a beautiful presentation and are oh-so satisfying to chew. – Shen

These heroes are a wonderful choice if you're cooking for a crowd and would like to serve a vegetarian option. The veggies included in the recipe are of course just suggestions; you can use anything you like or happen to have on hand. Thinly sliced celery, shredded carrots, and small broccoli florets also work well. Use your imagination and have fun!

Filling Ingredients:
2 cups fresh spinach leaves
1 cup green peppers, sliced
1 cup zucchini, chopped
1 cup tomato, chopped
1/2 cup cucumber, chopped
1/2 of a red onion, sliced

Dressing Ingredients:
3 tablespoons fresh mint, snipped into small pieces
2-3 tablespoons red wine vinegar
1 tablespoon olive oil
1 teaspoon dried oregano
1/2 teaspoon black pepper

1/2 cup fresh basil leaves
1 long load of French or sourdough bread, halved lengthwise

Combine the filling ingredients in a medium-sized bowl. In a small bowl, whisk the dressing ingredients together. Pour the dressing over the filling ingredients and toss well to coat. You can add a little more olive oil if you feel the need.

Line the bottom of the loaf of bread with the basil, and spoon the filling mixture on top. Replace the top half of the bread and cut into servings.
