Party On, Healthily!

Party foods are some of the most fun to make and eat (of course) but are often laden with fat, sugar and calories that stick with us long after the lights have gone down. If you want a party food with all the good-times flavor you love but none of the unhealthy nutritional baggage, creck out this recipe for stuffed mushroom caps. They're vegetarian, baked, and have savory Parmesan flavor to spare.

Ingredients:

1 lb. fresh button mushrooms (about 40), preferably medium to large in size
1/3 cup Parmesan cheese
1/4 cup dry breadcrumbs
1 teaspoon oregano
1 teaspoon dried parsley
1/4 teaspoon salt
few dashes black pepper
1/2 of a small onion, chopped fine
1 large clove of garlic, minced

Preheat the oven to 350 degrees. Carefully remove the stems from the mushroom caps and set the caps aside. Chop the stems fine, and put them in a medium-sized bowl with all the remaining ingredients except the caps. Fill the caps with with this mixture, pressing it in firmly and mounding it slightly on top. Place the caps in an ungreased 13 x 9 and bake for about 20 minutes.
