Heart Healthy Creamy Potato Soup
If you only keep one potato soup recipe at hand, make it this one. It’s rich and creamy and has ten times the flavor of anything you can pop out of a can, plus it’s ideally heart healthy: low in sodium and cholesterol and a great source of potassium and vitamin C. Next to the awesome taste and the quick cooking time (around half an hour), what I like best about this soup is how easy it is to customize. Use your own seasoning style to make it a unique creation every time. The seasonings I use in the recipe are just a suggestion which worked well for me.

Heart Healthy Creamy Potato Soup
makes 12 one-cup servings

3 cups water
3 packets sodium-free chicken bouillon
1 teaspoon garlic powder or granules
1 teaspoon Mrs. Dash® Garlic and Herb Blend
1 teaspoon Mrs. Dash® Table Blend
1 teaspoon Mrs. Dash® Original Blend
1/2 teaspoon liquid smoke
pinch black pepper
dash paprika
7 medium potatoes, peeled and cubed
1/4 cup olive oil
9 green onions, sliced thin
3 tablespoons flour
3 cups fat free milk (I mixed up my own from powdered)
1/4 cup grated parmesan-romano cheese blend

Low Sodium Soup: Creamy Potato1. Stir the water and seasonings together in a large lidded saucepan. Add the potatoes. Turn the heat to high and bring everything to a boil. Once boiling, reduce the heat to medium, put the lid on and simmer until the potatoes are tender, about 10 minutes. I like my potatoes quite soft, so I simmer a little longer, about 15 minutes. When they’re done, set them aside to add to the soup later.

2. Combine the olive oil and onions in another large saucepan. Cook the onions over medium-low heat for about five minutes, or until they start to brown nicely.

3. Add the flour to the olive oil and onions. Stir it in so it’s thoroughly combined. Add a cup of the milk, and stir for about a minute. Add the rest of the milk. Turn the heat up slightly and continue to cook, stirring frequently, for about five more minutes.

4. Add the potato mixture to the milk mixture. As you stir them together, you’ll notice the soup thickening quite a bit. Reduce the heat to low-ish and let the soup simmer for about ten minutes, stirring frequently. Serve your soup topped with sliced green onion tops, finely chopped red pepper, or shredded carrot for a pop of color.
