Gingered Cuke and Chile Salad
When you’re in the mood for something incredibly simple, fresh, healthy and flavorful, this is the salad to make. Fresh cucumbers, green chiles and carrots served with a sprinkling of powdered ginger and lime – it’s simplicity itself. And the taste is so exotic you can lose yourself in it. The colors alone will lift your spirits, and the warm rush of spiciness makes you smile from the inside out.

1 medium or 1/2 large cucumber, sliced thin
1 teaspoon powdered ginger
1 teaspoon salt substitute
1 green chile, sliced thin (leave the seeds in for more heat)
1 medium carrot, shaved into thin slices with a vegetable peeler
Lime juice to taste

Arrange the cucumber slices on a plate. Sprinkle them evenly with the ginger and salt substitute. Arrange the chiles and shaved carrot on top. Squeeze fresh lime juice over everything. Eat.
